Passar as batatas pela peneira e temperar bem com sal, pimenta e noz-moscada. Adicionar a farinha e amasse bem a mistura para formar uma massa firme. Trabalhar até ficar seca a ponto de não mais grudar nas mãos, mas ainda úmida o bastante para não se partir. Achatar uma colherada de massa na palma da mão, colocar um cubinho de pão frito no centro da massa e moldar. Usar o restante da massa e do pão frito, formando bolinhos de pingue-pongue. Colocar os bolinhos numa panela com água quase fervendo, em fogo baixo, tomando cuidado para que não grude entre si. cozinhar em 2 etapas, caso seja necessário. Depois de aproximadamente 1 minuto os bolinhos deverão subir à superfície. Cozinhar por mais 4 ou 5 minutos, tirar com a escumadeira e conservar aquecidos enquanto cozinha o resto. Junte a cerveja, o fermento, a manteiga reserve 2 colheres de sopa, o açúcar reserve 2 colheres de sopa e o sal. Bata por 4 minutos e transfira a massa para uma superfície enfarinhada. Sove por 15 minutos, ou até desgrudar das mãos, ficar macia, elástica e soltar bolhas. Com a metade da manteiga reservada, unte uma tigela, coloque a massa e cubra a tigela com filme plástico. Deixe a massa crescer, em local aquecido, por 1 hora, ou até dobrar de volume. Com o restante da manteiga, unte duas assadeiras grandes. Divida a massa em 12 partes e faça rolinhos de 60 cm de comprimento cada um, de pouco menos de 1 cm de espessura. Modele cada rolinho de massa dando a forma de um pretzel. Repita o procedimento com o restante da massa, dispondo os rolinhos prontos nas assadeiras. Em seguida, cubra as assadeiras com filme plástico e deixe a massa crescer, em local aquecido, por 30 minutos, ou até dobrar de volume. Ligue o forno à temperatura média. Leve ao forno por 25 minutos, ou até dourar a superfície da massa. Retire do forno, polvilhe o açúcar reservado e a canela em pó. Cortar os tomates em fatias e colocar no centro do prato. Escorrer a chicória, retirar a rodela da cebola e arrumar ao redor das fatias de tomate, como uma flor. Coloque em uma panela com água fervente e ferva até que as batatas estejam macias, porém firmes. Pique finamente o salsão, salsinha e a cebola. Coloque em uma tigela e acrescente as batatas cozidas e os ovos cozidos e picados. Misture delicadamente. Corte o bacon em pedaços de 1 cm e coloque em uma frigideira para dourar. Escorra em papel absorvente e mantenha a gordura na frigideira. Misture o açúcar, sal, pimenta, vinagre, água, ovos levemente batidos e mostarda em pó. Coloque na frigideira com a gordura do bacon e leve ao fogo, mexendo bem até que a mistura engrosse, cerca de 10 minutos. Acrescente à salada de batatas, misture delicadamente e leve à geladeira. &lt;br /&gt;- 120 g de açúcar de confeiteiro&lt;br /&gt;- 250 g de farinha de trigo peneirada&lt;br /&gt;- uma pitada de sal&lt;br /&gt;- 125 g de manteiga sem sal&lt;br /&gt;- 1 ovo&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Recheio&lt;/strong&gt;&lt;br /&gt;- 200 g de avelãs torradas e sem pele&lt;br /&gt;- 40 g de chocolate ao leite picado&lt;br /&gt;- 30 g de mel&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Creme fresco&lt;/strong&gt;&lt;br /&gt;- 70 g de açúcar&lt;br /&gt;- 25 g de glicose de milho&lt;br /&gt;- 90 g de creme fresco&lt;br /&gt;- uma pitada de sal&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Ganache de chocolate&lt;/strong&gt;&lt;br /&gt;- 250 g de chocolate picado&lt;br /&gt;- 150 g de creme de leite&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chantilly de chocolate&lt;/strong&gt;&lt;br /&gt;- 140 g de chocolate ao leite derretido&lt;br /&gt;- 250 g de creme fresco&lt;br /&gt;- 1/4 de xícara de açúcar&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Massa&lt;/strong&gt;&lt;br /&gt;1 Misture numa batedeira os três primeiros ingredientes, a seguir a manteiga levemente amolecida e o ovo, não bata demais. 2 Retire a massa da batedeira e cubra com filme plástico, leve à geladeira por 2 horas. 3 Retire a massa e abra com um rolo para forrar uma forma de torta. 4 Fure a massa com um garfo e leve ao forno pré aquecido a 180º até dourar. 5 Reserve.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Recheio&lt;/strong&gt;&lt;br /&gt;Separe estes ingredientes num recipiente, exceto as avelãs. Reserve.&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Creme fresco&lt;/strong&gt;&lt;br /&gt;Coloque numa panela os três primeiros ingredientes. Quando formar uma calda rala, despeje o creme, e forme um caramelo. Despeje essa calda quente sobre a mistura de chocolate e mel. Misture bem até dissolver o chocolate. Quando estiver frio, coloque as avelãs torradas. Acrescente a esse creme uma ganache de chocolate.&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Ganache de chocolate&lt;/strong&gt;&lt;br /&gt;Derreta os ingredientes em banho-maria. Coloque o creme pronto sobre a massa pré assada e decore com o chantilly de chocolate e raspas de chocolate.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chantilly de chocolate&lt;/strong&gt;&lt;br /&gt;- 140 g de chocolate ao leite, derretido&lt;br /&gt;- 250 g de creme fresco;&lt;br /&gt;- 1/4 de xícara de açúcar&lt;br /&gt;&lt;br /&gt;Derreta o chocolate em banho-maria e reserve. Bata o creme fresco com o açúcar até obter picos firmes. Passar o caldo por uma peneira (deve dar 500 ml de caldo). Cortar as folhas de espinafre em fatias muito finas. Temperar a ave com sal e pimenta e reservar. Aquecer o forno em 190 graus por 10 minutos. Untar uma assadeira (que tenha tampa) com 30 gramas de manteiga. Polvilhar a assadeira com a cebola picada e colocar os pedaços de frango. Tampar e levar para assar bem coberto por 25 minutos (a carne ainda estará branca). Numa panela aqueça o resto da manteiga e refogar o espinafre cortado, até que o caldo que se formar seque. Juntar os cheiros verdes picados e misturar muito bem. Deixar cozinhar por mais 3 minutos. Quando o frango estiver pronto, retirar da assadeira e conservar em local aquecido. Na assadeira juntar o caldo cozido do frango e deixar ferver até reduzir um pouco e se formar um molho de boa consistência. Separar 2 colheres (sopa) da nata e misturar o restante da mesma no molho. Deixar ferver por mais 3 a 4 minutos. Misturar a nata reservada com a gema. Misturar o espinafre ao molho e deixar ferver. Desligar o fogo e adicionar a gema misturada com a nata. sódio&lt;br /&gt;- 2½ xícaras (chá) de água morna&lt;br /&gt;- 5 xícaras (chá) de farinha de trigo&lt;br /&gt;- 1 colher (chá) de sal&lt;br /&gt;- 2 colheres (sopa) de açúcar mascavo&lt;br /&gt;- 1½ xícara (chá) de água&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Modo de preparo&lt;/strong&gt;:&lt;br /&gt;1 - Dissolva o fermento em 1 1/2 xícara (chá) de água. Coloque num recipiente grande e acrescente o açúcar. Mexa bem e acrescente a farinha, aos poucos, e em seguida o sal. Misture a massa até que se desprenda das mãos. Dependendo da qualidade da farinha, às vezes é necessário acrescentar mais ou menos. &lt;br /&gt;2 - Coloque a massa num recipiente e cubra com filme plástico. Amassar até obter uma massa lisa e mole. Deixar descansar 1/2 hora. Sobre um pano polvilhado com farinha de trigo. Com o auxílio de um rolo, abrir a massa o mais fino possível. Pincelar com a manteiga. Espalhar o recheio e sobre ele salpicar pedacinhos de manteiga. Suspender o pano para que enrole como rocambole. Colocar numa assadeira untada, dando-lhe o formato de meia-lua. Pincelar com a gema e levar ao forno moderado, por /12 hora. Depois de pronto, salpicar açúcar. Servir com chantilly à parte. Para o recheio, descascar e tirar as sementes das maçãs. Cortar em fatias finas. Colocar numa tigela e juntar a farinha de rosca. Levar a manteiga ao fogo até dourar. Juntar à mistura de maçãs. Adicionar as passas, o açúcar e o caldo de limão. Escorra em papel absorvente. Reserve. Retire a gordura, mas não limpe a panela. Refogue a cenoura e a cebola na manteiga, em lume brando por 15 minutos. Junte o caldo e deixe ferver. Adicione a batata e aumente o lume, até que comece a ferver novamente. Baixe o lume e cozinhe por 15 minutos. Tempere com sal e pimenta. Junte as salchichas e deixe cozinhar por mais 10 minutos. Retire e transfira para uma terrina de sopa.
